The Foxtail on the Lake’s Journey From Church to Mediterranean Restaurant

For nearly seven decades, the Good Shepherd Lutheran Church on the shores of Lake Opeka in Des Plaines stood as a spiritual haven for the local community. However, the winds of change blew through its shiplike structure, and now, the 15,000-square-foot edifice has been reborn as The Foxtail On The Lake, a culinary haven offering modern Mediterranean delights such as brick chicken, beef shawarma, and paella.

The Spiritual Transformation

David Villegas, a managing partner at The Foxtail On The Lake, reminisces about his childhood near the church. He frequently rode his bike around the building's grounds, admiring its unusual shape. When there were rumors that the church might be demolished, Villegas saw a new chapter in the life of the historic building, one in which it would continue to serve the community as a bustling restaurant instead of a house of worship.

"I knew what was missing here," Villegas said, "That's when I decided to jump into action."

Teaming up with restaurateur Tim Canning and Chef Maya Nahouli, Villegas brought the successful menu and concept of Downers Grove's The Foxtail to the shores of Lake Opeka. Supported by a grant and tax rebate from the city of Des Plaines, the ambitious renovation unfolded over a year and a half. The result is a culinary masterpiece that preserved the church's history, including the original lights, stained glass, and a piece of the altar adoring the host stand.

"I didn't know how much work it would entail, coming into this building, but it's truly a work of art," Villegas said. "Now it's alive, and it's rolling."

The Foxtail On The Lake spans 110 seats inside the restaurant and an additional 115 on the 5,000-square-foot patio overlooking the lake. The once sacred sanctuary has been transformed with vibrant colors, brass trim, and flourishing greenery, creating a unique atmosphere for patrons.

"This has been a word-of-mouth situation that has just exploded on the scene," Villegas said. "Everybody in the community has been well receptive, and the neighboring communities have been drawn into our space."

A Culinary Blessing to Last a Lifetime

"It means that I can look my children in the face and tell them that everything is possible," Villegas said. "That if you follow your dreams, this could really happen."

Hinting at possible future endeavors, Villegas suggested that this might not be the last time his group revitalizes historic locations facing demolition. Acknowledging Good Shepherd Lutheran Church's impact on the city, he hopes The Foxtail On The Lake will continue to bless the community with memorable experiences for the next 70 years.

"This congregation was a blessing for nearly 70 years in the city of Des Plaines," Villegas said. "We look forward to being a blessing to the community through incredible memories that are built here for the next 70 years."
